Crisp cucumber slices in a creamy, Greek yogurt dressing bursting with fresh Mediterranean flavors. A refreshing, heart-healthy, side dish for any gathering.
Thinly slice cucumbers. Slice by hand or quickly with a mandolin slicer (handheld or mixer attachment).
Sprinkle 1 teaspoon of salt over cucumbers and toss to coat. Reserve the remaining salt for the salad dressing. Place the salted cucumbers in a strainer with bowl underneath to catch the excess liquid, and let drain for 20 minutes. Rinse off the salt and pat dry. Place in a salad bowl.
In a small mixing bowl, combine remaining ingredients. Pour dressing over cucumbers and gently toss.
Refrigerate cucumber salad for 3 hours before serving.
